Meal planning

Lately, we've been hanging at home (obviously) but the leftovers are stacking up so I only have three meals planned. We are attempting our first weekend trip with Henry for a family bridal shower so I'm keeping it simple this week:

Monday-Mexican Quinoa with avocado
Tuesday-baked chicken with Brussels sprouts
Wednesday-beef roast in the crockpot with sweet potatoes, carrots and onions

Additional sides/prep:
Baked kale chips
Roasted parsnips
Paleo fudge
Paleo banana bread

It was great to finally meet Henry yesterday and to spend some time with all of you! I just love the pictures, it seem like SO long ago that my grandkids were babies! Lauren will soon be 17 and graduating. It seems impossible. Enjoy the baby years while you can, they go way too fast!
